Diet on the menu

At the end of this project guests of around thirty restaurants in Leiden can choose from regular healthy dishes or dishes which fit into their personal diets. For instance, healthy and tasty dishes which are suitable for patients with diabetes, high blood pressure, obesity and a high cholesterol level.

Cooking groups are being set up by, and for, chronic patients of Cello. These cooking groups are supervised by a ‘diet chef’ (in training) in combination with a dietician, a practice nurse, a physiotherapist, a general practitioner and/or a behavioural therapist as well as the kitchen staff of the host institution or restaurant. The dietician will be included in the process of creating and modifying dishes on the menu. A health scientist checks the composition of the meals.
An important goal of this project is to build a bridge between responsible dietary advice and tasty meals. Restaurants with diverse cultural backgrounds can participate in this project, so that patients can order dishes from around the world (e.g. Italian, Asian, Arabian and Greek). Therefore, this project is a practical application of (diet) counselling of patients with a chronic disease, and of course others who are interested.

The Cello website will provide support in acquiring skills and creating a platform to exchange knowledge and experiences of patients with a chronic disease. This is done through instruction videos and the publication of tasty recipes. ‘Self-management’ of patients with a chronic disease is stimulated in a practical, positive and visual manner.
